Cherry Tomatoes with Italian Sausage + Creme Fraiche

 

The best winter meal with warm sausage and creamy pasta

Ingredients

Package of Rigatoni
1 tbsp olive oil
2 tbsp butter
1 lb of italian sausage
1 shallots, sliced
1 sweet onion, diced
4 cloves garlic minced
2 tsp red pepper flakes
Pinch of salt and pepper to taste
1 lb of twilights cherry tomatoes (or any type of cherry tomato)
2 tbsp tomato paste
½ cup white wine
2 cup spinach
½ cup crème fraîche
½ cup parmesan cheese

Instructions

1. Bring a large pot of salted water to a boil.
2. In a skillet add a touch of olive oil and butter. Then add the garlic, shallot, and onions.

3. Once they start to brown, add the italian sausage. Season with salt, pepper and red pepper flakes. Deglaze pan with white wine and reduce by half.

4. Then add in your tomatoes and cook on medium until tomatoes begin to burst. About a minute before your pasta is done add in spinach. Then add cooked pasta, creme fraiche, and parmesan. Add in a ladle of pasta water and toss.
