Creamy Caramelized Tomato Paste Pasta
The perfect pantry meal!
Ingredients
4 garlic cloves, minced
½ cup of grated Parmesan
⅓ cup olive oil
2 tablespoons butter
½ cup heavy cream
¼ teaspoon red pepper flakes, plus more for serving
1 (6-ounce) can of tomato paste
½ teaspoon kosher salt
1 pound dried pasta, such as spaghetti or rigatoni
Freshly grated parmesan for serving
Instructions
Bring a large pot of salted water to a boil and cook pasta until a minute before al dente.
Heat the butter in a large skillet over medium-high heat until bubbling. Then add the garlic, tomato paste, and red pepper flakes. Continue to cook until the tomato paste has darkened in color, about 5 minutes.
Turn down the heat and add the cream. Mix until combined and then add any necessary salt.
Next, add a splash of white wine vinegar and next the parmesan. Stir to combine.
Move the almost cooked pasta into the sauce with a bit of the pasta water and combine over simmer until the sauce and pasta have combined to create a silky sauce. Garnish with more red pepper flakes and parmesan.
