Creamy Caramelized Tomato Paste Pasta

 

The perfect pantry meal!

Ingredients

  • 4 garlic cloves, minced

  • ½ cup of grated Parmesan

  • ⅓  cup olive oil

  • 2 tablespoons butter

  • ½ cup heavy cream

  • ¼  teaspoon red pepper flakes, plus more for serving

  • 1 (6-ounce) can of tomato paste

  • ½ teaspoon kosher salt

  • 1 pound dried pasta, such as spaghetti or rigatoni

  • Freshly grated parmesan for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until a minute before al dente.

  2. Heat the butter in a large skillet over medium-high heat until bubbling. Then add the garlic, tomato paste, and red pepper flakes. Continue to cook until the tomato paste has darkened in color, about 5 minutes. 

  3. Turn down the heat and add the cream. Mix until combined and then add any necessary salt. 

  4. Next, add a splash of white wine vinegar and next the parmesan. Stir to combine.

  5. Move the almost cooked pasta into the sauce with a bit of the pasta water and combine over simmer until the sauce and pasta have combined to create a silky sauce. Garnish with more red pepper flakes and parmesan.
