Fresh Crab & Corn Chowder

 

A true holiday classic in the Lambert & Hess Household

Ingredients

  • ½ cup butter (+ bacon fat if you have it)

  • 1 sweet onion, chopped

  • 3-4 cloves of garlic, minced

  • 1-2 stalk of celery, chopped

  • 1 ½ tbsp flour

  • Handful of fresh basil, chopped

  • 4 cups frozen sweet corn (I love Trader Joe’s sweet corn)

  • 2 cups quality chicken broth

  • 1 cup half n half

  • 1 cup of heavy cream

  • Salt + pepper

  • 4 tsp Tabasco (heavier for more kick)

  • 1lb fresh lump crab (Costco has the best quality and great price)

Instructions

  1. In a large soup pot, saute onions, celery, and garlic in butter over medium heat until the onions are translucent. Add flour and basil, continually stirring. 

  2. Mince 3 cups of corn in a food processor until minced into small pieces. Add the mixture and the remaining cup of whole corn to the soup pot. 

  3. Cook for 5 mins over low heat. 

  4. Turn down to simmer and add milk, broth, tabasco, and salt + pepper to taste. 

  5. Return heat to medium, bring mixture to just below a boil, and add crab meat. Heat through and serve immediately!

  6. Best with a fresh baguette and a glass of champagne.
