Crispy Salmon Bowls with Ginger + Honey
These are on repeat in our house right now! 🌶️🍴
Ingredients
1/4 cup soy sauce
2-3 teaspoons fish sauce
3 tablespoons honey
1 tablespoon fresh grated ginger (I use the frozen Trader Joes cubes)
2-3 tablespoons sambal oelek
2 salmon filets, cut into chunks/cubes
4 tablespoons butter
6 cloves garlic, chopped
3-4 cups cooked cilantro + lime rice
Salsa
1 cup diced mango
1/4 cup candied jalapeños
1/4 cup basil, chopped
2 tablespoons lime juice
salt
Instructions
1. In a measuring cup, combine the soy sauce, fish sauce, honey, ginger, and chili paste.
2. To make the salsa, combine all ingredients in a bowl and set aside.
3. Heat a large skillet over medium heat and add the butter. Next, add your salmon, skin side down and cook for 3 minutes, until the salmon skin is crispy. Flip, then reduce heat to medium and add your garlic. Cook for another minute.
3. Pour in your sauce with the salmon. Cook for a few more minutes, until the sauce is bubbling and thickens. Remove the salmon from the skillet. Transfer the remaining sauce to a small serving bowl or measuring cup. You’ll want to keep this for topping your finished bowls!
4. Serve the salmon over the bowls of cilantro + lime rice. Top with the salsa and extra sauce and enjoy!
Candied Jalapeños
1. Bring 1/3 cup honey to a gentle boil. Simmer over low for 3-5 minutes.
2. Meanwhile, arrange 3-4 sliced/diced jalapeños in a mason jar. Pour the honey over the jalapeños. Add 2 tablespoons of apple cider vinegar and a generous pinch of salt. Let cool and use in everything!
