Fajita Bowls with Chicken + Tortillas
These are on repeat in our house right now! 🌶️🍴
Ingredients
2 tablespoons olive oil
1 1/2 pounds boneless chicken breasts or tenders, thinly sliced
2 tablespoons smoked paprika
2 teaspoons chili powder
Salt and pepper
3 cloves garlic, chopped
2 sweet onions, sliced
2 bell peppers, sliced
3-4 cups cooked cilantro lime rice
Tortillas, I like the cook-at-home ones
shredded lettuce, guacamole/avocado, jalapeños, and cilantro, for serving
Cilantro Lime Vinaigrette
1/3 cup olive oil
1/3 cup salsa verde or green enchilada sauce
1/4 cup orange or lime juice
2 teaspoons candid jalapenos + the juice
1/3 cup cilantro, chopped
Salt + pepper
Instructions
1. Season the chicken with some olive oil, garlic, paprika, chili powder, + salt and pepper. Over high heat, cook the chicken until seared and cooked through, about 8-10 minutes, and then remove the chicken from the skillet.
2. In the same skillet, add the onions + peppers and cook until tender + fragrant, about 5 minutes.
3. Add the chicken to the peppers and toss to combine.
4. Make the vinaigrette by combining all ingredients in a glass jar. Season with salt.
5. Spoon the chicken and peppers over the bowls of rice. Top with lettuce, avocado, jalapenos, cilantro, and sour cream. Then pour over the vinaigrette. Serve with warm tortillas. Enjoy!
